Another example of Georgian cuisine.  This was also popular at a recent Christmas party.

 

                          Walnut-Stuffed Prunes

     1/2  C             Red Wine - Full Bodied

   1      C             Water

   3      Tbsp          Sugar

  20      Lg            Prunes -- pitted

   2                    Cloves

  20      Lg            Walnut Pieces

     1/2  C             Whipping Cream

   1      Tbsp          Raspberry Or Cherry Liqueur

 

1 - In a small saucepan, combine the wine, water, and sugar.  Cook, stirring, over medium heat until the sugar dissolves, 1 to 2 minutes.  Add the prunes and cloves and cook over medium-low heat until the prunes swell, 25 minutes.

 

2 - Drain the prunes, reserving about 1/4 cup of the liquid.  Cool the prunes, then stuff each with a walnut piece and arrange on a serving platter.  Spoon the reserved liquid over the prunes.

 

3 - Whip the cream with the liqueur until stiff.  From a pastry bag fitted with a decorative tip, pipe the cream over the prunes.
