Chili Prawns Served On Cucumber Rounds

  25      Med           Shrimp -- peeled & deveined

   1      Thin          Continental Cucumber -- sliced

   1                    Fresh Green Chile -- seeded & diced

   2                    Dried Red Chillies -- seeded & diced

   1                    Onion -- diced

   1      Clove         Garlic -- diced

   1      Tsp           Fresh Ginger Root -- finely diced

   1      Stalk         Lemon Grass, White Only -- finely diced

   1      Tbsp          Fresh Coriander -- chopped

   1      Tbsp          Oil

   1      Tbsp          Fish Sauce

 

To make the chilli sauce, mix together and chopped finely the onion, lemon grass, garlic, chilies, ginger, coriander, oil, and fish sauce.

 

Shell and clean the shrimp.  Curl the shrimp into a round shape and secure with a toothpick.  Marinate in the chilli sauce for at least an hour.

 

Pan fry 8-10 shrimp at a time in a little oil.  Remove the toothpicks.

 

Slice the cucumber into rounds 1/8 inch thick.  Place a warm or cold shrimp on each cucumber round.  If the shrimp does not sit well, you can use a tooth pick to secure it.

 

Garnish with fresh coriander.
