Broccoli Salad

   1      Head          Broccoli

     1/2  C             Raisins

     1/4  C             Red Onion

   2      Tbsp          Sugar

   3      Tbsp          White Wine Vinegar

   1      C             Mayonnaise

   1      C             Sunflower Seeds, Roasted

  10      Slices        Bacon -- cooked & crumbled

 

1. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Crumble and set aside.

2. Chop broccoli and onion (and almonds if using rather than sunflower seeds) in a food processor.  Pulse just for a couple of turns.  You want chunks the size of a peanut, not a mush.

3. In a salad bowl, toss together broccoli and raisins. In a separate bowl, whisk together the white sugar, vinegar and mayonnaise. Pour over broccoli mixture and toss to coat. Refrigerate for at least 2 hours.

4. Before serving, sprinkle with sunflower seeds and crumbled bacon. Toss and serve.
